Raiding the cupboard, the shelf and the fridge I have gathered together all these lovely ingredients ...... now what am I going to make?

  1. Ratatouille is the first thing that springs to mind......I simmer it all for about an hour until it's thickened and all the flavours have amalgamated. We have it with a jacket spud or brown rice or pasta, with grated cheese sprinkled over. Or I sometimes use it as a lasagne filling, or top it with cheesy mash for a cottage pie.

  2. I agree .... ratatouille but I roast the vegetables in the oven first with garlic butter and a little salt to give them a lovely caramelised flavour and then mix with the tomatoes and simmer for a while until it thickens. Delicious :-)

  3. Ratatouille, veggie lasagne or veggie pasta sauce , delicious either way :)

  4. Oooh ... you're all so clever - well done - Ratatouille it is :-)

Kay's way sounds even better than mine, must do that next time !!

  5. Can't be anything else than Ratatouille. I do like the idea of roasting the veg first and then serving it with jackets. Great tip - thank you.
